If one of your owners will not act as the operations manager you must have an operations manager to conduct on-site supervision of your Restaurant operations. This manager must complete our initial training program. This individual is not required to own any equity interest in your Restaurant business.

According to Carbones Pizzeria's 2025 Franchise Disclosure Document, if the owner of the restaurant will not be directly managing the location, an operations manager is required. This operations manager must conduct on-site supervision of the restaurant's operations.
The operations manager must complete the initial training program provided by Carbones Pizzeria. The FDD specifies that this individual is not required to own any equity interest in the restaurant business.
The initial training program for operations managers, as well as owner-operators, is approximately 12-24 days in length, depending on the restaurant model being opened. The training program consists largely of on-site, "hands on" work in a Carbone's Pizza restaurant in the Twin Cities area, but also includes some "classroom training."
