According to Bonchon's 2025 Franchise Disclosure Document, there are two main restaurant operation options available to franchisees: table service restaurants and fast casual restaurants. The table service restaurant, referred to as a "Table Service Restaurant," provides full dine-in service. Alternatively, the fast casual restaurant, known as a "Counter Service Restaurant," allows customers to order and pay at a counter before receiving their food.
Within these two models, Bonchon offers four different restaurant concepts. The table service model includes the "Dine-In Restaurant," which is a full-service restaurant with a full bar, ranging from 2,200 to 3,000 square feet, and offers a broad menu. The fast casual model includes "Fast Casual Restaurants" (1,600-2,500 sq ft, beer only), "Delivery and Carryout Only Restaurants" (1,000-1,500 sq ft), and "Remote Kitchen Restaurants" (200-600 sq ft).
Prospective franchisees should consider the different investment costs, operational complexities, and target markets associated with each model. The table service model may require a larger initial investment due to the need for more space, a full bar, and a larger staff. The fast casual model may be more suitable for franchisees looking for a lower-cost, simpler operation focused on takeout and delivery. Franchisees have the opportunity to develop any combination of restaurant concepts with Bonchon's prior written consent.
