What This Means (2025 FDD)

According to Bonchon's 2025 Franchise Disclosure Document, in addition to a General Manager, a franchisee must employ a second full-time manager. This individual will serve as either an assistant manager or a kitchen manager, and is referred to as "the Manager." This Manager also has day-to-day management responsibilities for the Bonchon business and restaurant, including on-premises supervision and direct participation in operations.

The Manager is required to attend and successfully complete the Initial Training Program. This ensures that the Manager is properly trained in Bonchon's operational standards and procedures. The FDD also states that after a Manager's death, disability, or termination of employment, the franchisee must notify Bonchon immediately and designate a successor or acting Manager within 10 days. The successor Manager must also obtain a Bonchon-approved nationally accredited food manager certification and complete the Initial Training Program.

Furthermore, the FDD specifies that there must be at least one Restaurant Manager on duty during all hours of operation, who can be the General Manager or someone trained and supervised by the General Manager. This requirement, along with the mandate for a second full-time manager, highlights Bonchon's emphasis on having qualified management present at all times to oversee operations and maintain brand standards. For franchisees, this means budgeting for the salaries and training of at least two full-time managers in addition to themselves or an Operating Principal.
